Ingredients

  • 100 g spiced beef sausage
  • 60 g mozzarella
  • 4 pieces eggs
  • 2 pieces pepper
  • 2 medium tomato
  • 2 tbsp butter

Method

  1. Slice the spiced beef sausage into thin rounds, dice the tomatoes, and cut the peppers into thin strips, setting all components aside before you begin cooking.
  2. Melt 1 tablespoon of butter in a wide skillet over medium heat and sauté the spiced beef sausage rounds for about 8 minutes until they develop a lightly browned, caramelized edge.
  3. Add the pepper strips and diced tomatoes to the skillet and cook for a further 10 minutes, stirring occasionally, until the vegetables soften and release their juices into the pan.
  4. Crack the 4 eggs into a bowl, whisk them vigorously until the yolks and whites are fully combined, then pour the egg mixture over the sausage and vegetable base in the skillet.
  5. Reduce the heat to low and allow the omelet to set on the bottom for approximately 5 minutes without stirring, drawing the edges gently inward with a spatula to let any unset egg flow underneath.
  6. Scatter the mozzarella evenly over the surface of the omelet and place a lid over the skillet for the final 3 minutes so the cheese melts into a smooth, creamy layer.
  7. Slide the finished omelet onto a serving plate, dot with the remaining tablespoon of butter while still hot, and serve immediately between 2 portions.
