Ingredients
- 100 g spiced beef sausage
- 60 g mozzarella
- 4 pieces eggs
- 2 pieces pepper
- 2 medium tomato
- 2 tbsp butter
Method
- Slice the spiced beef sausage into thin rounds, dice the tomatoes, and cut the peppers into thin strips, setting all components aside before you begin cooking.
- Melt 1 tablespoon of butter in a wide skillet over medium heat and sauté the spiced beef sausage rounds for about 8 minutes until they develop a lightly browned, caramelized edge.
- Add the pepper strips and diced tomatoes to the skillet and cook for a further 10 minutes, stirring occasionally, until the vegetables soften and release their juices into the pan.
- Crack the 4 eggs into a bowl, whisk them vigorously until the yolks and whites are fully combined, then pour the egg mixture over the sausage and vegetable base in the skillet.
- Reduce the heat to low and allow the omelet to set on the bottom for approximately 5 minutes without stirring, drawing the edges gently inward with a spatula to let any unset egg flow underneath.
- Scatter the mozzarella evenly over the surface of the omelet and place a lid over the skillet for the final 3 minutes so the cheese melts into a smooth, creamy layer.
- Slide the finished omelet onto a serving plate, dot with the remaining tablespoon of butter while still hot, and serve immediately between 2 portions.
