Ingredients
- 100 g spiced beef sausage
- 4 pieces eggs
- 60 g mozzarella
- 2 pieces pepper
- 1 tbsp parsley
Method
- Preheat the oven to 180°C (350°F) and lightly grease a 4-cup muffin tin.
- Slice the spiced beef sausage into thin rounds and dice the peppers into small pieces.
- Layer the sliced spiced beef sausage and diced peppers evenly into the prepared muffin cups.
- Crack one egg into each muffin cup directly over the sausage and pepper mixture.
- Top each cup with an equal portion of shredded mozzarella, distributing the 60 g evenly across all four cups.
- Bake in the preheated oven for 40 to 42 minutes, or until the egg whites are fully set and the mozzarella is golden and bubbling.
- Remove the muffins from the oven and garnish each with freshly chopped parsley before serving.
