Ingredients

  • 100 g spiced beef sausage
  • 4 pieces eggs
  • 60 g mozzarella
  • 2 pieces pepper
  • 1 tbsp parsley

Method

  1. Preheat the oven to 180°C (350°F) and lightly grease a 4-cup muffin tin.
  2. Slice the spiced beef sausage into thin rounds and dice the peppers into small pieces.
  3. Layer the sliced spiced beef sausage and diced peppers evenly into the prepared muffin cups.
  4. Crack one egg into each muffin cup directly over the sausage and pepper mixture.
  5. Top each cup with an equal portion of shredded mozzarella, distributing the 60 g evenly across all four cups.
  6. Bake in the preheated oven for 40 to 42 minutes, or until the egg whites are fully set and the mozzarella is golden and bubbling.
  7. Remove the muffins from the oven and garnish each with freshly chopped parsley before serving.
