  • 300 g whole chicken
  • 300 g cauliflower rice stuffing
  • 30 g almonds
  • 1 small onion
  • 1 tsp spices

Method

  1. Preheat the oven to 190°C (375°F) and prepare the whole chicken by patting it dry with paper towels to ensure a crisp skin during roasting.
  2. In a mixing bowl, combine the cauliflower rice stuffing, almonds, onion, and spices, mixing thoroughly until the filling is evenly seasoned.
  3. Carefully fill the cavity of the whole chicken with the cauliflower rice stuffing mixture, packing it gently but firmly to hold its shape during cooking.
  4. Truss the chicken securely with kitchen twine to keep the stuffing intact and ensure even cooking throughout the 35-minute roasting time.
  5. Place the stuffed chicken in a roasting pan and roast in the preheated oven for 35 minutes, or until the skin is golden brown and the juices run clear when the thickest part of the thigh is pierced.
  6. Remove the chicken from the oven and allow it to rest for 5 minutes before carving, so the juices redistribute evenly through the meat and stuffing.
