Ingredients
- 300 g chicken breast
- 2 pieces pepper
- 2 medium tomato
- 1 small onion
- 2 tbsp olive oil
Method
- Cut the chicken breast into bite-sized cubes, slice the peppers into thin strips, and chop the tomatoes and onion into small pieces.
- Heat the olive oil in a wide pan over medium-high heat until shimmering.
- Add the onion to the pan and sauté for about 3 minutes until softened and translucent.
- Add the chicken breast cubes and cook for 7 minutes, stirring occasionally, until the pieces are golden on all sides.
- Stir in the sliced peppers and cook for another 5 minutes until they begin to soften.
- Add the chopped tomatoes, reduce the heat to medium, and simmer everything together for 7 minutes until the tomatoes break down into a rich, cohesive sauce.
- Taste and adjust seasoning before serving the sote hot directly from the pan.
