Ingredients

  • 150 g ground chicken
  • 1 tsp ginger
  • 2 tbsp soy sauce
  • 1 tbsp sesame seeds
  • 1 small scallions

Method

  1. Finely chop the scallions and combine them in a mixing bowl with the ground chicken, ginger, and 1 tablespoon of soy sauce until the mixture is well incorporated.
  2. Divide the mixture into equal portions and shape each portion firmly around a skewer, forming compact elongated patties characteristic of tsukune.
  3. Preheat a grill or grill pan over high heat and brush the grates lightly to prevent sticking.
  4. Grill the tsukune skewers for approximately 3 minutes, turning them halfway through, until the chicken is cooked through and the exterior is lightly charred.
  5. During the final minute of cooking, brush the skewers with the remaining 1 tablespoon of soy sauce to build a glossy, caramelized glaze.
  6. Transfer the tsukune to a serving plate and finish with a generous sprinkle of sesame seeds before serving.
