Ingredients
- 50 g green lentils (small portion)
- 1 small onion
- 2 medium tomato
- 1 tbsp parsley
- 1 (juiced) lemon
- 2 tbsp olive oil
Method
- Rinse the green lentils under cold water and bring them to a boil in a pot of water, then simmer for 9 minutes until tender but still holding their shape.
- While the lentils cook, dice the tomatoes into small pieces and finely chop the parsley.
- Drain the cooked lentils and transfer them to a large bowl to cool slightly.
- Add the diced tomatoes and chopped parsley to the cooled lentils, then dress with the fresh lemon juice and olive oil.
- Toss all ingredients together gently to combine, season to taste, and let the salad rest for a few minutes before serving to allow the flavors to meld.
