Ingredients

  • 50 g green lentils (small portion)
  • 1 small onion
  • 2 medium tomato
  • 1 tbsp parsley
  • 1 (juiced) lemon
  • 2 tbsp olive oil

Method

  1. Rinse the green lentils under cold water and bring them to a boil in a pot of water, then simmer for 9 minutes until tender but still holding their shape.
  2. While the lentils cook, dice the tomatoes into small pieces and finely chop the parsley.
  3. Drain the cooked lentils and transfer them to a large bowl to cool slightly.
  4. Add the diced tomatoes and chopped parsley to the cooled lentils, then dress with the fresh lemon juice and olive oil.
  5. Toss all ingredients together gently to combine, season to taste, and let the salad rest for a few minutes before serving to allow the flavors to meld.
