- 2 stalks celery
- 50 g carrots
- 1 small onion
- 1 (juiced) lemon
- 1 tbsp dill
- 2 tbsp olive oil
Method
- Peel and dice the celery stalks and carrots into bite-sized pieces during the 19-minute prep time.
- Heat 2 tablespoons of olive oil in a wide pan over medium heat and add the celery and carrots, stirring to coat them evenly in the oil.
- Pour in the juice of 1 lemon, reduce the heat to low, and allow the vegetables to simmer gently for 15 minutes until tender.
