Ingredients

  • 2 stalks celery
  • 50 g carrots
  • 1 small onion
  • 1 (juiced) lemon
  • 1 tbsp dill
  • 2 tbsp olive oil

Method

  1. Peel and dice the celery stalks and carrots into bite-sized pieces during the 19-minute prep time.
  2. Heat 2 tablespoons of olive oil in a wide pan over medium heat and add the celery and carrots, stirring to coat them evenly in the oil.
  3. Pour in the juice of 1 lemon, reduce the heat to low, and allow the vegetables to simmer gently for 15 minutes until tender.
  4. Remove the pan from heat and let the dish cool to room temperature, as this Turkish zeytinyağlı preparation is traditionally served at room temperature or chilled.
  5. Transfer to a serving dish and finish with 1 tablespoon of fresh dill scattered over the top before serving.
