Ingredients

  • 2 Ripe avocados
  • 4 Large eggs
  • 1/4 cup Shredded cheddar
  • 2 tbsp Bacon bits
  • to taste Salt, pepper, paprika
  • 1 tbsp Chives, chopped

Method

  1. Preheat oven to 400°F (200°C). Halve avocados and remove pit.
  2. Scoop out a little extra avocado to make room for the egg.
  3. Place in a muffin tin for stability. Crack an egg into each half.
  4. Season with salt, pepper, and paprika. Top with cheese and bacon.
  5. Bake 12-15 minutes until egg whites are set. Garnish with chives.
