Ingredients
- 2 Ripe avocados
- 4 Large eggs
- 1/4 cup Shredded cheddar
- 2 tbsp Bacon bits
- to taste Salt, pepper, paprika
- 1 tbsp Chives, chopped
Method
- Preheat oven to 400°F (200°C). Halve avocados and remove pit.
- Scoop out a little extra avocado to make room for the egg.
- Place in a muffin tin for stability. Crack an egg into each half.
- Season with salt, pepper, and paprika. Top with cheese and bacon.
- Bake 12-15 minutes until egg whites are set. Garnish with chives.
