Ingredients

  • 1.5 cups (150g) Blanched almond flour
  • 1 cup (100g) Ground golden flaxseed
  • 1 tbsp Psyllium husk powder
  • 1 tbsp Oat fiber
  • 2 tsp Baking powder
  • 1 pinch Fine sea salt
  • 1.5 cups (360g) Full-fat cottage cheese, whey-strained
  • 6 Large eggs
  • 1 tbsp Poppy seeds, for topping

Method

  1. Preheat oven to 350°F (175°C) and line a standard loaf pan with parchment.
  2. Whisk almond flour, ground flax, psyllium, oat fiber, baking powder, and salt in a large bowl.
  3. In a separate bowl, blend cottage cheese and eggs until mostly smooth.
  4. Fold wet into dry until evenly combined; the batter will be thick and slightly tacky.
  5. Transfer to the loaf pan, smooth the top, and scatter poppy seeds over the surface.
  6. Bake for 1 hour 10 minutes, until the top is deep golden and a skewer comes out clean.
  7. Cool fully in the pan before slicing — the crumb sets as it cools.
