Ingredients
- 1 large head Cauliflower, riced
- 3 Eggs, beaten
- 2 tbsp Soy sauce
- 1 tbsp Sesame oil
- 2 cloves Garlic, minced
- 2 tbsp Green peas (optional)
- 1/4 cup Carrots, finely diced
- 3 Green onions, sliced
- 2 tbsp Avocado oil
Method
- Heat avocado oil in a large wok or skillet over high heat.
- Stir-fry carrots 2 minutes. Add garlic, cook 30 seconds.
- Push veggies to the side. Scramble eggs in the empty space. Break into pieces.
- Add cauliflower rice. Stir-fry 3-4 minutes until tender.
- Add soy sauce, sesame oil, and green onions. Toss and serve immediately.
