Ingredients

  • 1 large head Cauliflower, riced
  • 3 Eggs, beaten
  • 2 tbsp Soy sauce
  • 1 tbsp Sesame oil
  • 2 cloves Garlic, minced
  • 2 tbsp Green peas (optional)
  • 1/4 cup Carrots, finely diced
  • 3 Green onions, sliced
  • 2 tbsp Avocado oil

Method

  1. Heat avocado oil in a large wok or skillet over high heat.
  2. Stir-fry carrots 2 minutes. Add garlic, cook 30 seconds.
  3. Push veggies to the side. Scramble eggs in the empty space. Break into pieces.
  4. Add cauliflower rice. Stir-fry 3-4 minutes until tender.
  5. Add soy sauce, sesame oil, and green onions. Toss and serve immediately.
