Ingredients
- 3 cups Cauliflower, riced
- 1 large Egg
- 1/2 cup Mozzarella, shredded
- 1/4 cup Parmesan, grated
- 1/2 tsp Garlic powder
- 1 medium Avocado, mashed
- 1 tsp Lemon juice
- 1/4 tsp Red pepper flakes
- to taste Salt and pepper
Method
- Preheat oven to 425°F (220°C). Line a baking sheet with parchment.
- Microwave riced cauliflower 5 minutes. Cool, then squeeze in a clean towel to remove water.
- Mix cauliflower with egg, mozzarella, parmesan, garlic powder, salt, and pepper.
- Form into 4 rectangular slabs (about 1/2-inch thick) on the baking sheet.
- Bake 18-20 minutes until golden and firm. Flip halfway for extra crisp.
- Mash avocado with lemon juice, salt, and red pepper flakes.
- Spread avocado over each cauliflower toast. Serve immediately.
