Ingredients

  • 3 cups Cauliflower, riced
  • 1 large Egg
  • 1/2 cup Mozzarella, shredded
  • 1/4 cup Parmesan, grated
  • 1/2 tsp Garlic powder
  • 1 medium Avocado, mashed
  • 1 tsp Lemon juice
  • 1/4 tsp Red pepper flakes
  • to taste Salt and pepper

Method

  1. Preheat oven to 425°F (220°C). Line a baking sheet with parchment.
  2. Microwave riced cauliflower 5 minutes. Cool, then squeeze in a clean towel to remove water.
  3. Mix cauliflower with egg, mozzarella, parmesan, garlic powder, salt, and pepper.
  4. Form into 4 rectangular slabs (about 1/2-inch thick) on the baking sheet.
  5. Bake 18-20 minutes until golden and firm. Flip halfway for extra crisp.
  6. Mash avocado with lemon juice, salt, and red pepper flakes.
  7. Spread avocado over each cauliflower toast. Serve immediately.
