Ingredients

  • 1 lb (450g) Ground chicken (93/7)
  • 1/4 cup (60g) Yellow onion, finely diced
  • 3 cloves Garlic, minced
  • 1 tbsp Fresh ginger, grated
  • 2 tsp Curry powder
  • 1 tsp Ground turmeric
  • 1/4 cup (60g) Tomato puree (no sugar)
  • 2 tbsp Ghee or avocado oil
  • 1 tsp Salt
  • 2 tbsp Fresh cilantro, chopped

Method

  1. Heat ghee in a large skillet over medium heat. Sauté onion 3 minutes, then add garlic and ginger and cook 1 minute until fragrant.
  2. Stir in curry powder and turmeric, toasting 30 seconds.
  3. Add ground chicken and break up with a wooden spoon. Cook until no longer pink, 6-8 minutes.
  4. Stir in tomato puree and 2 tbsp water. Simmer 4-5 minutes until the sauce thickens around the meat.
  5. Season with salt, finish with cilantro, and serve.
