Ingredients
- 1 lb (450g) Ground chicken (93/7)
- 1/4 cup (60g) Yellow onion, finely diced
- 3 cloves Garlic, minced
- 1 tbsp Fresh ginger, grated
- 2 tsp Curry powder
- 1 tsp Ground turmeric
- 1/4 cup (60g) Tomato puree (no sugar)
- 2 tbsp Ghee or avocado oil
- 1 tsp Salt
- 2 tbsp Fresh cilantro, chopped
Method
- Heat ghee in a large skillet over medium heat. Sauté onion 3 minutes, then add garlic and ginger and cook 1 minute until fragrant.
- Stir in curry powder and turmeric, toasting 30 seconds.
- Add ground chicken and break up with a wooden spoon. Cook until no longer pink, 6-8 minutes.
- Stir in tomato puree and 2 tbsp water. Simmer 4-5 minutes until the sauce thickens around the meat.
- Season with salt, finish with cilantro, and serve.
