  • 1/4 cup (28g) Coconut flour
  • 1/4 cup (30g) Vanilla whey protein powder
  • 2 tsp Freeze-dried strawberries, crushed
  • 1/3 cup (80ml) Full-fat canned coconut milk
  • 1 tbsp Coconut oil, melted
  • 2 tbsp Powdered monk fruit
  • 1/2 tsp Vanilla extract

Method

  1. Combine coconut flour, protein powder, and crushed freeze-dried strawberries.
  2. Stir in coconut milk, coconut oil, monk fruit, and vanilla until a uniform dough forms. Let rest 5 minutes.
  3. Press into a small parchment-lined dish (about 4x4 inches).
  4. Refrigerate at least 30 minutes, then cut into 4 bars (2 per serving).
