Coffee Jello with Whipped Cream
Sweetened black coffee set with gelatin into a wobbly cube, served under a cloud of whipped cream. Cold, caffeinated, 1g net carbs.

Ingredients
- 2 cups (480ml) Brewed coffee, hot
- 2 tbsp (14g) Unflavored gelatin
- 2 tbsp Powdered monk fruit
- 1/4 cup (60ml) Heavy cream (for whipped topping)
- 1/4 tsp Vanilla extract (optional)
Method
- Sprinkle gelatin over 1/4 cup of cold water and let bloom 5 minutes.
- Stir bloomed gelatin into hot coffee with monk fruit until fully dissolved.
- Pour into 2 ramekins and refrigerate at least 3 hours until set.
- Just before serving, whip heavy cream with vanilla to soft peaks.
- Spoon whipped cream over the chilled jelly and serve.
