Ingredients

  • 2 cups (480ml) Brewed coffee, hot
  • 2 tbsp (14g) Unflavored gelatin
  • 2 tbsp Powdered monk fruit
  • 1/4 cup (60ml) Heavy cream (for whipped topping)
  • 1/4 tsp Vanilla extract (optional)

Method

  1. Sprinkle gelatin over 1/4 cup of cold water and let bloom 5 minutes.
  2. Stir bloomed gelatin into hot coffee with monk fruit until fully dissolved.
  3. Pour into 2 ramekins and refrigerate at least 3 hours until set.
  4. Just before serving, whip heavy cream with vanilla to soft peaks.
  5. Spoon whipped cream over the chilled jelly and serve.
