Ingredients

  • 1 large English cucumber
  • 1 can (5 oz) Canned tuna, drained
  • 2 tbsp Mayonnaise
  • 1 tsp Sriracha (optional)
  • 1/2 medium Avocado, sliced
  • 1 tsp Sesame seeds
  • for dipping Soy sauce or coconut aminos

Method

  1. Use a vegetable peeler to slice cucumber into long thin ribbons (about 6 ribbons).
  2. Pat ribbons dry with paper towels.
  3. Mix tuna, mayo, and sriracha in a bowl.
  4. Lay 2-3 cucumber ribbons overlapping. Spoon tuna along one end and add a slice of avocado.
  5. Roll up tightly and secure with a toothpick.
  6. Sprinkle with sesame seeds. Serve with soy sauce for dipping.
