- 120 g Goat cheese
- 2 handful(s) Fresh spinach
- 1 medium Onion
- 200 g Mushrooms
- 2 tbsp Butter
- 3 clove(s) Garlic
- to taste Salt and pepper
Method
- Preheat oven to 190°C (375°F).
- Cut the chicken breasts hasselback-style (don't cut all the way through).
- Mix goat cheese and spinach, stuff between the cuts.
- Caramelize onions in butter for 15 min, add mushrooms and cook 5 more min.
- Arrange chicken on a baking sheet, bake 25-30 min.
- Serve with the caramelized onion-mushroom mixture.
