Ingredients

  • 4 piece(s) Chicken breast
  • 120 g Goat cheese
  • 2 handful(s) Fresh spinach
  • 1 medium Onion
  • 200 g Mushrooms
  • 2 tbsp Butter
  • 3 clove(s) Garlic
  • to taste Salt and pepper

Method

  1. Preheat oven to 190°C (375°F).
  2. Cut the chicken breasts hasselback-style (don't cut all the way through).
  3. Mix goat cheese and spinach, stuff between the cuts.
  4. Caramelize onions in butter for 15 min, add mushrooms and cook 5 more min.
  5. Arrange chicken on a baking sheet, bake 25-30 min.
  6. Serve with the caramelized onion-mushroom mixture.
