Ingredients
- 200g (7 oz) Skinless chicken breast, butterflied
- 30g (1 oz) Cream cheese, softened
- 30g (about 1 cup) Fresh baby spinach, finely chopped
- 1 clove Garlic, minced
- 30g (about 1/4 cup) Mozzarella cheese, shredded
- 1 tbsp Olive oil
- 1/2 tsp Smoked paprika
- 1/4 tsp Garlic powder
- to taste Fine sea salt and black pepper
Method
- Preheat the air fryer to 360°F (180°C).
- Mix the softened cream cheese, chopped spinach, minced garlic, and mozzarella in a small bowl.
- Lay the butterflied chicken breast flat. Spoon the filling onto one half, then fold the other half over to close. Secure with toothpicks if needed.
- Brush both sides of the chicken with olive oil. Rub with smoked paprika, garlic powder, salt, and pepper.
- Place in the air fryer basket and cook 15-18 minutes, flipping halfway, until the internal temperature reaches 165°F (75°C).
- Rest 3 minutes before slicing. Remove toothpicks if used.
