Ingredients

  • 200g (7 oz) Skinless chicken breast, butterflied
  • 30g (1 oz) Cream cheese, softened
  • 30g (about 1 cup) Fresh baby spinach, finely chopped
  • 1 clove Garlic, minced
  • 30g (about 1/4 cup) Mozzarella cheese, shredded
  • 1 tbsp Olive oil
  • 1/2 tsp Smoked paprika
  • 1/4 tsp Garlic powder
  • to taste Fine sea salt and black pepper

Method

  1. Preheat the air fryer to 360°F (180°C).
  2. Mix the softened cream cheese, chopped spinach, minced garlic, and mozzarella in a small bowl.
  3. Lay the butterflied chicken breast flat. Spoon the filling onto one half, then fold the other half over to close. Secure with toothpicks if needed.
  4. Brush both sides of the chicken with olive oil. Rub with smoked paprika, garlic powder, salt, and pepper.
  5. Place in the air fryer basket and cook 15-18 minutes, flipping halfway, until the internal temperature reaches 165°F (75°C).
  6. Rest 3 minutes before slicing. Remove toothpicks if used.
