Ingredients
- 300g (2 medium) Zucchini, spiralized
- 1 medium (150g flesh) Ripe avocado
- 80g Cherry tomatoes, halved
- 3 tbsp (30g) Hulled hemp seeds (hemp hearts)
- 2 tbsp Fresh lemon juice
- 2 tbsp Extra-virgin olive oil
- 1 small clove Garlic, minced
- small handful (10g) Fresh basil leaves, torn
- 1/4 tsp Red pepper flakes (optional)
- to taste Fine sea salt and black pepper
Method
- Pat the spiralized zucchini gently with paper towels to remove excess moisture.
- Mash half the avocado in a small bowl with lemon juice, olive oil, minced garlic, salt, and pepper until creamy — this is your dressing.
- Dice the remaining avocado.
- Toss the zucchini noodles with the dressing in a large bowl until evenly coated.
- Divide between two bowls. Top with diced avocado, cherry tomatoes, and a generous sprinkle of hemp seeds.
- Finish with torn basil and red pepper flakes if using.
