Ingredients

  • 300g (2 medium) Zucchini, spiralized
  • 1 medium (150g flesh) Ripe avocado
  • 80g Cherry tomatoes, halved
  • 3 tbsp (30g) Hulled hemp seeds (hemp hearts)
  • 2 tbsp Fresh lemon juice
  • 2 tbsp Extra-virgin olive oil
  • 1 small clove Garlic, minced
  • small handful (10g) Fresh basil leaves, torn
  • 1/4 tsp Red pepper flakes (optional)
  • to taste Fine sea salt and black pepper

Method

  1. Pat the spiralized zucchini gently with paper towels to remove excess moisture.
  2. Mash half the avocado in a small bowl with lemon juice, olive oil, minced garlic, salt, and pepper until creamy — this is your dressing.
  3. Dice the remaining avocado.
  4. Toss the zucchini noodles with the dressing in a large bowl until evenly coated.
  5. Divide between two bowls. Top with diced avocado, cherry tomatoes, and a generous sprinkle of hemp seeds.
  6. Finish with torn basil and red pepper flakes if using.
