Ingredients
- 250g (about 2) Avocado, mashed
- 4 tbsp Cocoa powder
- 3 tbsp Coconut oil, melted
- 2 large Eggs
- 100g Dark chocolate chips (sugar-free)
- 90g Almond flour
- 60g Erythritol
- 1 tsp Baking powder
- 1/2 tsp Vanilla extract
- 1/4 tsp Salt
Method
- Preheat oven to 350°F (180°C). Line a baking pan with parchment.
- Blend avocado until completely smooth.
- Mix dry ingredients: almond flour, cocoa, baking powder, salt, erythritol.
- Add eggs, coconut oil, vanilla, and avocado to the dry mix. Stir until combined.
- Fold in chocolate chips.
- Spread in pan and bake 30 minutes until a toothpick comes out semi-clean.
- Cool completely before cutting into 12 pieces.
