Ingredients

  • 1 cup (112g) Almond flour
  • 1/4 cup Butter, melted
  • 2 Large eggs
  • 1 tsp Banana extract
  • 1/4 cup (30g) Walnuts, chopped
  • 1/3 cup Powdered monk fruit
  • 1 tsp Baking powder
  • 1/2 tsp Vanilla extract
  • to taste Pinch of salt

Method

  1. Preheat oven to 350°F (180°C). Grease a small (5x3-inch) loaf pan.
  2. Whisk almond flour, monk fruit, baking powder, and salt.
  3. In another bowl, beat eggs with melted butter, banana extract, and vanilla.
  4. Combine wet and dry, then fold in walnuts.
  5. Pour into the loaf pan. Bake 30-35 minutes until a toothpick comes out clean.
  6. Cool fully before slicing. Yields 4 slices — 2 per serving.
