Ingredients
- 1 cup (112g) Almond flour
- 1/4 cup Butter, melted
- 2 Large eggs
- 1 tsp Banana extract
- 1/4 cup (30g) Walnuts, chopped
- 1/3 cup Powdered monk fruit
- 1 tsp Baking powder
- 1/2 tsp Vanilla extract
- to taste Pinch of salt
Method
- Preheat oven to 350°F (180°C). Grease a small (5x3-inch) loaf pan.
- Whisk almond flour, monk fruit, baking powder, and salt.
- In another bowl, beat eggs with melted butter, banana extract, and vanilla.
- Combine wet and dry, then fold in walnuts.
- Pour into the loaf pan. Bake 30-35 minutes until a toothpick comes out clean.
- Cool fully before slicing. Yields 4 slices — 2 per serving.
