Ingredients

  • 1 lb (450g) Large shrimp, peeled
  • 1/3 cup Almond flour
  • 2 tbsp Parmesan, grated
  • 3 tbsp Mayonnaise
  • 1 tbsp Sriracha
  • 1 tsp Rice vinegar
  • 1 tsp Erythritol
  • 3 tbsp Avocado oil
  • for serving Lettuce leaves

Method

  1. Mix almond flour, parmesan, salt and pepper. Coat shrimp.
  2. Fry shrimp in avocado oil 2 minutes per side until golden. Drain.
  3. Whisk mayo, sriracha, rice vinegar, and erythritol for the bang bang sauce.
  4. Arrange shrimp on lettuce leaves.
  5. Drizzle generously with bang bang sauce. Serve immediately.
