Ingredients

  • 1.5 cups (170g) Pecan halves
  • 3 tbsp Butter
  • 1/3 cup Brown erythritol or allulose
  • 2 tbsp Heavy cream
  • 1/2 tsp Vanilla extract
  • 1/4 tsp Salt

Method

  1. Melt butter in a skillet over medium heat.
  2. Stir in sweetener and cook 2 minutes until dissolved and bubbling.
  3. Add heavy cream and stir until a smooth caramel forms, about 2 minutes.
  4. Stir in vanilla and salt.
  5. Add pecans and toss to coat evenly. Cook 2-3 minutes until pecans are toasted.
  6. Spread on parchment paper to cool. They'll harden as they cool.
  7. Break apart and store in an airtight container.
