- 32 oz (900g) Cream cheese
- 1.5 cups (150g) Almond flour
- 5 tbsp Butter, melted
- 1 cup Erythritol
- 4 large Eggs
- 1/4 cup Heavy cream
- 2 tsp Vanilla extract
- 1 tbsp Lemon juice
- 1/4 tsp Salt
Method
- Preheat oven to 325°F (160°C).
- Mix almond flour, 2 tbsp erythritol, and melted butter. Press into a springform pan.
- Bake crust 10 minutes. Let cool.
- Beat cream cheese and remaining erythritol until smooth.
- Add eggs one at a time, then cream, vanilla, and lemon juice.
- Pour over crust. Bake 40-45 minutes until edges set but center jiggles.
- Cool in oven with door cracked for 1 hour. Refrigerate 4 hours.
