Ingredients

  • 32 oz (900g) Cream cheese
  • 1.5 cups (150g) Almond flour
  • 5 tbsp Butter, melted
  • 1 cup Erythritol
  • 4 large Eggs
  • 1/4 cup Heavy cream
  • 2 tsp Vanilla extract
  • 1 tbsp Lemon juice
  • 1/4 tsp Salt

Method

  1. Preheat oven to 325°F (160°C).
  2. Mix almond flour, 2 tbsp erythritol, and melted butter. Press into a springform pan.
  3. Bake crust 10 minutes. Let cool.
  4. Beat cream cheese and remaining erythritol until smooth.
  5. Add eggs one at a time, then cream, vanilla, and lemon juice.
  6. Pour over crust. Bake 40-45 minutes until edges set but center jiggles.
  7. Cool in oven with door cracked for 1 hour. Refrigerate 4 hours.
