Ingredients
- 300g (10.5 oz) Boneless, skinless chicken thigh, cut into 1-inch cubes
- 6 (about 150g) Streaky bacon strips
- 1 tbsp Olive oil
- 1 tsp Smoked paprika
- 1 tsp Garlic powder
- 1 tsp Italian seasoning
- to taste Fine sea salt and black pepper
Method
- Preheat the oven to 400°F (200°C) and line a sheet pan with parchment. (Or fire up the grill.)
- Cut each bacon strip in half lengthwise to make thinner strips that wrap easily.
- Toss the chicken cubes with olive oil, paprika, garlic powder, Italian seasoning, salt, and pepper.
- Wrap each chicken cube in a strip of bacon, then thread onto soaked wooden or metal skewers (3-4 cubes per skewer).
- Bake 18-20 minutes, turning once halfway, until the bacon is crisp and the chicken's internal temperature is 165°F (75°C). For grill: 12-15 minutes total, turning often.
- Rest 3 minutes before serving.
