Ingredients

  • 300g (10.5 oz) Boneless, skinless chicken thigh, cut into 1-inch cubes
  • 6 (about 150g) Streaky bacon strips
  • 1 tbsp Olive oil
  • 1 tsp Smoked paprika
  • 1 tsp Garlic powder
  • 1 tsp Italian seasoning
  • to taste Fine sea salt and black pepper

Method

  1. Preheat the oven to 400°F (200°C) and line a sheet pan with parchment. (Or fire up the grill.)
  2. Cut each bacon strip in half lengthwise to make thinner strips that wrap easily.
  3. Toss the chicken cubes with olive oil, paprika, garlic powder, Italian seasoning, salt, and pepper.
  4. Wrap each chicken cube in a strip of bacon, then thread onto soaked wooden or metal skewers (3-4 cubes per skewer).
  5. Bake 18-20 minutes, turning once halfway, until the bacon is crisp and the chicken's internal temperature is 165°F (75°C). For grill: 12-15 minutes total, turning often.
  6. Rest 3 minutes before serving.
