Ingredients

  • 300g (10.5 oz) Skinless chicken breast
  • 200g (about 2 medium) Zucchini, spiralized into noodles
  • 4 strips (about 80g) Streaky bacon
  • 60g (1 cup) Romaine lettuce hearts, chopped
  • 50g Parmesan cheese, shaved
  • 30ml (2 tbsp) Sugar-free Caesar dressing
  • 1 tbsp Olive oil
  • to taste Fine sea salt and black pepper
  • 2 Lemon wedges (to serve)

Method

  1. Cook the bacon in a dry skillet over medium heat until crisp, 5-6 minutes. Drain on paper towel; reserve 1 teaspoon bacon fat. Crumble when cool.
  2. Season the chicken with salt and pepper. Add to the same skillet with the bacon fat and olive oil; cook 5-6 minutes per side until cooked through (165°F / 75°C). Rest 3 minutes, then slice.
  3. While the chicken rests, briefly warm the zoodles in the skillet for 1-2 minutes — just until they soften slightly but stay crisp. Don't overcook or they'll release water.
  4. Divide the zoodles and chopped romaine between two bowls.
  5. Top with sliced chicken, crumbled bacon, and shaved parmesan.
  6. Drizzle with Caesar dressing. Serve with lemon wedges.
