Ingredients
- 300g (10.5 oz) Skinless chicken breast
- 200g (about 2 medium) Zucchini, spiralized into noodles
- 4 strips (about 80g) Streaky bacon
- 60g (1 cup) Romaine lettuce hearts, chopped
- 50g Parmesan cheese, shaved
- 30ml (2 tbsp) Sugar-free Caesar dressing
- 1 tbsp Olive oil
- to taste Fine sea salt and black pepper
- 2 Lemon wedges (to serve)
Method
- Cook the bacon in a dry skillet over medium heat until crisp, 5-6 minutes. Drain on paper towel; reserve 1 teaspoon bacon fat. Crumble when cool.
- Season the chicken with salt and pepper. Add to the same skillet with the bacon fat and olive oil; cook 5-6 minutes per side until cooked through (165°F / 75°C). Rest 3 minutes, then slice.
- While the chicken rests, briefly warm the zoodles in the skillet for 1-2 minutes — just until they soften slightly but stay crisp. Don't overcook or they'll release water.
- Divide the zoodles and chopped romaine between two bowls.
- Top with sliced chicken, crumbled bacon, and shaved parmesan.
- Drizzle with Caesar dressing. Serve with lemon wedges.
