Ingredients
- 1 cup (112g) Almond flour
- 2 tbsp (14g) Coconut flour
- 1/4 cup Butter, melted
- 2 Large eggs
- 1/3 cup Powdered monk fruit
- 1 tsp Baking powder
- 1/2 tsp Vanilla extract
- 1 tbsp (14g) Sugar-free chocolate chips (for glaze)
- 1 tbsp Coconut oil (for glaze)
Method
- Preheat oven to 350°F (180°C). Grease 4 wells of a donut pan.
- Whisk almond flour, coconut flour, monk fruit, and baking powder.
- Beat eggs with melted butter and vanilla, then combine with the dry ingredients.
- Pipe or spoon batter into the donut wells. Bake 14-18 minutes until set.
- Cool 5 minutes, then unmold.
- Microwave chocolate chips with coconut oil in 20-second bursts until smooth. Dip the top of each donut in the glaze.
- Let glaze set 5 minutes. Two donuts per serving.
