Ingredients

  • 1 cup (112g) Almond flour
  • 2 tbsp (14g) Coconut flour
  • 1/4 cup Butter, melted
  • 2 Large eggs
  • 1/3 cup Powdered monk fruit
  • 1 tsp Baking powder
  • 1/2 tsp Vanilla extract
  • 1 tbsp (14g) Sugar-free chocolate chips (for glaze)
  • 1 tbsp Coconut oil (for glaze)

Method

  1. Preheat oven to 350°F (180°C). Grease 4 wells of a donut pan.
  2. Whisk almond flour, coconut flour, monk fruit, and baking powder.
  3. Beat eggs with melted butter and vanilla, then combine with the dry ingredients.
  4. Pipe or spoon batter into the donut wells. Bake 14-18 minutes until set.
  5. Cool 5 minutes, then unmold.
  6. Microwave chocolate chips with coconut oil in 20-second bursts until smooth. Dip the top of each donut in the glaze.
  7. Let glaze set 5 minutes. Two donuts per serving.
