Ingredients

  • 2 cups Heavy cream
  • 5 large Egg yolks
  • 1/3 cup + 4 tsp Erythritol
  • 2 tsp Vanilla extract
  • pinch Salt

Method

  1. Preheat oven to 325°F (160°C).
  2. Heat cream until simmering.
  3. Whisk yolks with 1/3 cup erythritol. Slowly pour in hot cream, whisking.
  4. Add vanilla and salt. Strain into 4 ramekins.
  5. Place in a water bath. Bake 40-45 minutes until set but jiggly.
  6. Chill 4 hours. Sprinkle 1 tsp erythritol on each, torch until caramelized.
