Ingredients
- 2 cups Heavy cream
- 5 large Egg yolks
- 1/3 cup + 4 tsp Erythritol
- 2 tsp Vanilla extract
- pinch Salt
Method
- Preheat oven to 325°F (160°C).
- Heat cream until simmering.
- Whisk yolks with 1/3 cup erythritol. Slowly pour in hot cream, whisking.
- Add vanilla and salt. Strain into 4 ramekins.
- Place in a water bath. Bake 40-45 minutes until set but jiggly.
- Chill 4 hours. Sprinkle 1 tsp erythritol on each, torch until caramelized.
