Ingredients
- 2 cups Mixed nuts (almonds, pecans, walnuts)
- 1 cup Unsweetened coconut flakes
- 1/2 cup Pumpkin seeds
- 3 tbsp Coconut oil, melted
- 3 tbsp Erythritol
- 1 tsp Cinnamon
- 1 tsp Vanilla extract
- 1/2 tsp Salt
Method
- Preheat oven to 325°F (160°C).
- Roughly chop nuts. Mix with coconut flakes and pumpkin seeds.
- Toss with melted coconut oil, erythritol, cinnamon, vanilla, and salt.
- Spread on a baking sheet. Bake 18-20 minutes, stirring halfway.
- Let cool completely for crunch. Store in an airtight container.
