Ingredients

  • 2 cups Mixed nuts (almonds, pecans, walnuts)
  • 1 cup Unsweetened coconut flakes
  • 1/2 cup Pumpkin seeds
  • 3 tbsp Coconut oil, melted
  • 3 tbsp Erythritol
  • 1 tsp Cinnamon
  • 1 tsp Vanilla extract
  • 1/2 tsp Salt

Method

  1. Preheat oven to 325°F (160°C).
  2. Roughly chop nuts. Mix with coconut flakes and pumpkin seeds.
  3. Toss with melted coconut oil, erythritol, cinnamon, vanilla, and salt.
  4. Spread on a baking sheet. Bake 18-20 minutes, stirring halfway.
  5. Let cool completely for crunch. Store in an airtight container.
