Ingredients
- 2 cups Heavy cream
- 4 large Egg yolks
- 1/2 cup Erythritol
- 2 tsp Vanilla extract
- 1 cup Almond milk, unsweetened
- 1/4 tsp Salt
Method
- Whisk egg yolks with erythritol until pale.
- Heat cream and almond milk until simmering. Slowly pour into yolks, whisking constantly.
- Return to heat, stir until mixture coats the back of a spoon.
- Stir in vanilla and salt. Chill mixture completely.
- Churn in ice cream maker, or freeze in a container, stirring every 30 minutes.
