Ingredients

  • 2 cups Heavy cream
  • 4 large Egg yolks
  • 1/2 cup Erythritol
  • 2 tsp Vanilla extract
  • 1 cup Almond milk, unsweetened
  • 1/4 tsp Salt

Method

  1. Whisk egg yolks with erythritol until pale.
  2. Heat cream and almond milk until simmering. Slowly pour into yolks, whisking constantly.
  3. Return to heat, stir until mixture coats the back of a spoon.
  4. Stir in vanilla and salt. Chill mixture completely.
  5. Churn in ice cream maker, or freeze in a container, stirring every 30 minutes.
