Ingredients

  • 1.5 cups (168g) Almond flour
  • 1 cup (112g) Mozzarella cheese, shredded
  • 2 tbsp Cream cheese
  • 1 large Egg
  • 250g Ground beef or lamb
  • 1 small Onion, finely diced
  • 1 tbsp Tomato paste
  • 1 tsp each Red pepper flakes, cumin, paprika
  • for serving Fresh parsley and lemon wedges

Method

  1. Preheat oven to 425°F (220°C).
  2. Make fathead dough: melt mozzarella with cream cheese, mix in almond flour and egg. Knead until smooth.
  3. Roll dough very thin between parchment sheets into 4 oval shapes.
  4. Mix ground meat with onion, tomato paste, spices, salt, and pepper.
  5. Spread a thin layer of meat mixture over each dough piece.
  6. Bake 10-12 minutes until edges are crispy and meat is cooked.
  7. Serve with fresh parsley and a squeeze of lemon. Roll up to eat.
