Ingredients
- 1.5 cups (168g) Almond flour
- 1 cup (112g) Mozzarella cheese, shredded
- 2 tbsp Cream cheese
- 1 large Egg
- 250g Ground beef or lamb
- 1 small Onion, finely diced
- 1 tbsp Tomato paste
- 1 tsp each Red pepper flakes, cumin, paprika
- for serving Fresh parsley and lemon wedges
Method
- Preheat oven to 425°F (220°C).
- Make fathead dough: melt mozzarella with cream cheese, mix in almond flour and egg. Knead until smooth.
- Roll dough very thin between parchment sheets into 4 oval shapes.
- Mix ground meat with onion, tomato paste, spices, salt, and pepper.
- Spread a thin layer of meat mixture over each dough piece.
- Bake 10-12 minutes until edges are crispy and meat is cooked.
- Serve with fresh parsley and a squeeze of lemon. Roll up to eat.
