Ingredients

  • 3/4 cup (175ml) Water
  • 1/4 cup (60ml) Heavy cream
  • 1 tea bag (or 1 tsp loose) Black tea (Assam or English Breakfast)
  • 3 Green cardamom pods, crushed
  • 1 small Cinnamon stick
  • 2 Whole cloves
  • 1/4-inch slice Fresh ginger, sliced
  • 2 Black peppercorns
  • 1 tbsp Powdered allulose

Method

  1. Combine the water, cardamom, cinnamon, cloves, ginger, and peppercorns in a small saucepan. Bring to a boil and simmer 5 minutes to bloom the spices.
  2. Add the tea bag and simmer 1 minute more.
  3. Pour in the heavy cream and bring back to a low simmer — don't boil hard or the cream can split.
  4. Stir in the allulose and simmer 2-3 minutes for the flavors to marry.
  5. Strain through a fine-mesh sieve into a mug and serve hot.
