  • 4 oz (115g) Cream cheese, softened
  • 4 large Eggs
  • 2 tbsp Erythritol
  • 1 tsp Baking powder
  • 1 tsp Vanilla extract
  • 2 tbsp Butter (for cooking)

Method

  1. Blend all ingredients until smooth.
  2. Melt butter in a non-stick pan over medium-low heat.
  3. Pour 3-inch rounds. Cook 2-3 minutes until bubbles form.
  4. Flip carefully, cook 1-2 more minutes.
  5. Serve with butter and sugar-free maple syrup.
