Keto Roast Beef with Cauliflower Mash
Sunday-style beef sirloin roast — rubbed with herbs, roasted to a pink centre, and rested before slicing. Plated over creamy cauliflower mash with steamed vegetables. A classic family dinner without the potatoes.

Ingredients
- 1kg (2.2 lb) Beef sirloin or scotch fillet roast
- 2 tbsp Olive oil
- 4 Garlic cloves, smashed
- 4 Fresh thyme sprigs
- 1 tbsp Dijon mustard
- 2 tsp Fine sea salt
- 1 tsp Black pepper
- 500g (1 medium head) Cauliflower florets
- 3 tbsp (40g) Unsalted butter
- 50ml Heavy cream
- 200g Broccoli florets (for serving)
- 100g Green beans (for serving)
Method
- Take the beef out of the fridge 30 minutes before cooking to come to room temperature. Preheat the oven to 400°F (200°C).
- Pat the beef dry. Rub all over with olive oil, Dijon, smashed garlic, thyme, salt, and pepper.
- Place the beef on a rack over a roasting tray. Roast 20 minutes at 400°F to develop a crust, then reduce to 325°F (160°C) and continue roasting until the internal temperature reads 130°F (55°C) for medium-rare, about 40-50 more minutes for a 1kg roast.
- Transfer the beef to a cutting board, tent loosely with foil, and rest 15 minutes.
- While it rests, steam the cauliflower until very soft (8-10 minutes), then blend with butter, cream, salt, and pepper until silky.
- Steam the broccoli and green beans together for 4-5 minutes, until bright and just tender.
- Carve the beef against the grain into thick slices. Plate over the cauli mash with broccoli and green beans alongside. Spoon any resting juices over the meat.
