Ingredients

  • 32 oz (900g) Cream cheese, softened
  • 3/4 cup Erythritol
  • 5 large Eggs
  • 1 cup Heavy cream
  • 1 tsp Vanilla extract
  • 1/4 tsp Salt

Method

  1. Preheat oven to 425°F (220°C). Line a springform pan with parchment, letting it go up the sides.
  2. Beat cream cheese and erythritol until smooth.
  3. Add eggs one at a time, beating after each.
  4. Mix in heavy cream and vanilla until just combined (do not overmix).
  5. Pour into prepared pan.
  6. Bake 40-45 minutes until deeply browned on top but still jiggly in the center.
  7. Cool completely, then refrigerate at least 4 hours before serving.
