- 32 oz (900g) Cream cheese, softened
- 3/4 cup Erythritol
- 5 large Eggs
- 1 cup Heavy cream
- 1 tsp Vanilla extract
- 1/4 tsp Salt
Method
- Preheat oven to 425°F (220°C). Line a springform pan with parchment, letting it go up the sides.
- Beat cream cheese and erythritol until smooth.
- Add eggs one at a time, beating after each.
- Mix in heavy cream and vanilla until just combined (do not overmix).
- Pour into prepared pan.
- Bake 40-45 minutes until deeply browned on top but still jiggly in the center.
- Cool completely, then refrigerate at least 4 hours before serving.
