Ingredients

  • 500g (about 1/2 head) Green cabbage, cored and thinly sliced
  • 4 strips (about 80g) Streaky bacon, chopped
  • 2 tbsp (30g) Unsalted butter
  • 3 cloves Garlic, minced
  • to taste Fine sea salt and black pepper
  • 1 tbsp Fresh parsley, chopped (to serve)

Method

  1. Cook the chopped bacon in a large skillet over medium heat 5-6 minutes, until crisp. Transfer to a paper towel; leave the bacon fat in the pan.
  2. Add the butter to the bacon fat. Once melted, add the sliced cabbage.
  3. Toss to coat, then leave undisturbed 2-3 minutes to brown the edges. Stir, season with salt and pepper, and cook another 4-5 minutes, tossing occasionally.
  4. Add the garlic in the last minute; stir until fragrant.
  5. Take off the heat. Toss the bacon back in. Finish with chopped parsley.
