Ingredients

  • 1.5 lbs (680g) Chicken thighs, cubed
  • 3 tbsp Soy sauce
  • 2 tbsp Sesame oil
  • 1 tbsp Rice vinegar
  • 2 tbsp Erythritol
  • 3 cloves Garlic, minced
  • 1 tsp Fresh ginger, grated
  • 2 tbsp Sesame seeds
  • 3 Green onions, sliced
  • 2 tbsp Avocado oil

Method

  1. Season chicken with salt and pepper. Pan-fry in avocado oil over high heat 5-6 minutes until crispy.
  2. Mix soy sauce, sesame oil, rice vinegar, erythritol, garlic, and ginger in a small bowl.
  3. Pour sauce over chicken, toss to coat. Cook 2 minutes until sauce thickens and glazes the chicken.
  4. Remove from heat. Sprinkle with sesame seeds and green onions.
  5. Serve over cauliflower rice.
