Ingredients
- 1 medium Cauliflower
- 2 tbsp Rice vinegar
- 4 sheets Nori seaweed
- 150 g Salmon or avocado
- 60 g Cream cheese
- 2 tbsp Soy sauce
Method
- Grate cauliflower and microwave for 3-4 min, squeeze out excess water.
- Mix with rice vinegar to achieve a 'rice' consistency.
- Place nori sheet on a sushi mat, spread the cauliflower rice.
- Arrange salmon/avocado and cream cheese in the center.
- Roll tightly, slice with a sharp knife.
- Serve with soy sauce.
