Ingredients

  • 1 medium Cauliflower
  • 2 tbsp Rice vinegar
  • 4 sheets Nori seaweed
  • 150 g Salmon or avocado
  • 60 g Cream cheese
  • 2 tbsp Soy sauce

Method

  1. Grate cauliflower and microwave for 3-4 min, squeeze out excess water.
  2. Mix with rice vinegar to achieve a 'rice' consistency.
  3. Place nori sheet on a sushi mat, spread the cauliflower rice.
  4. Arrange salmon/avocado and cream cheese in the center.
  5. Roll tightly, slice with a sharp knife.
  6. Serve with soy sauce.
