Ingredients

  • 1.25 lbs (570g) Flank or sirloin steak, thinly sliced
  • 1/4 cup Coconut aminos (sugar-free soy alternative)
  • 2 tbsp Sesame oil, toasted
  • 4 cloves Garlic, minced
  • 1 tbsp Fresh ginger, grated
  • 1 tbsp Erythritol or monk fruit sweetener
  • 2 tbsp Sesame seeds, toasted
  • 4 cups Cauliflower rice
  • 1/2 cup Kimchi, sugar-free
  • 1 Cucumber, sliced
  • 1 small Carrot, julienned
  • 2 Green onions, sliced
  • 1 tbsp Avocado oil, for cooking

Method

  1. Whisk coconut aminos, sesame oil, garlic, ginger, and sweetener in a bowl. Toss with sliced beef and marinate 15 minutes.
  2. Sauté cauliflower rice in a dry skillet over medium heat 5-6 minutes until tender. Season with salt. Divide between 4 bowls.
  3. Heat avocado oil in a large skillet over high heat. Sear beef in a single layer 1-2 minutes per side until caramelized. Work in batches if needed.
  4. Pour any remaining marinade into the skillet and reduce 30 seconds.
  5. Top each bowl with seared beef. Arrange cucumber, carrot, and kimchi alongside.
  6. Sprinkle with sesame seeds and green onions. Serve immediately.
