Ingredients
- 1.25 lbs (570g) Flank or sirloin steak, thinly sliced
- 1/4 cup Coconut aminos (sugar-free soy alternative)
- 2 tbsp Sesame oil, toasted
- 4 cloves Garlic, minced
- 1 tbsp Fresh ginger, grated
- 1 tbsp Erythritol or monk fruit sweetener
- 2 tbsp Sesame seeds, toasted
- 4 cups Cauliflower rice
- 1/2 cup Kimchi, sugar-free
- 1 Cucumber, sliced
- 1 small Carrot, julienned
- 2 Green onions, sliced
- 1 tbsp Avocado oil, for cooking
Method
- Whisk coconut aminos, sesame oil, garlic, ginger, and sweetener in a bowl. Toss with sliced beef and marinate 15 minutes.
- Sauté cauliflower rice in a dry skillet over medium heat 5-6 minutes until tender. Season with salt. Divide between 4 bowls.
- Heat avocado oil in a large skillet over high heat. Sear beef in a single layer 1-2 minutes per side until caramelized. Work in batches if needed.
- Pour any remaining marinade into the skillet and reduce 30 seconds.
- Top each bowl with seared beef. Arrange cucumber, carrot, and kimchi alongside.
- Sprinkle with sesame seeds and green onions. Serve immediately.
