Ingredients
- 2 Large eggs
- 6 tbsp (90g) Natural peanut butter (no sugar)
- 1/4 cup (20g) Unsweetened cocoa powder
- 1/3 cup Powdered monk fruit
- 1 tsp Vanilla extract
- 1/2 tsp Baking powder
Method
- Preheat oven to 350°F (180°C). Line a small (5x5) baking dish with parchment.
- Whisk eggs, peanut butter, monk fruit, and vanilla until smooth.
- Stir in cocoa and baking powder until uniform.
- Pour into the dish and bake 15-18 minutes until set but still slightly soft in the center.
- Cool fully before cutting into 4 squares (2 per serving).
