Ingredients

  • 2 Large eggs
  • 6 tbsp (90g) Natural peanut butter (no sugar)
  • 1/4 cup (20g) Unsweetened cocoa powder
  • 1/3 cup Powdered monk fruit
  • 1 tsp Vanilla extract
  • 1/2 tsp Baking powder

Method

  1. Preheat oven to 350°F (180°C). Line a small (5x5) baking dish with parchment.
  2. Whisk eggs, peanut butter, monk fruit, and vanilla until smooth.
  3. Stir in cocoa and baking powder until uniform.
  4. Pour into the dish and bake 15-18 minutes until set but still slightly soft in the center.
  5. Cool fully before cutting into 4 squares (2 per serving).
