Ingredients
- 4 medium Zucchini
- 2 cup Cooked chicken, shredded
- 3 tbsp Pesto
- 1/2 cup Mozzarella, shredded
- 1/2 cup Cherry tomatoes, halved

Method
- Preheat oven to 200°C (400°F).
- Halve zucchini lengthwise and scoop out the center.
- Mix chicken and pesto, stuff into zucchini.
- Top with cherry tomatoes and mozzarella.
