- 2 (6 oz / 170g each) Chicken breasts, pounded to 1/2-inch
- 2 Large eggs, beaten
- 1 cup (56g) Pork rinds, finely crushed
- 2 tbsp Avocado oil (for frying)
- to taste Salt and black pepper

Method
- Season chicken with salt and pepper.
- Dip each breast in beaten egg, then dredge thoroughly in crushed pork rinds.
- Heat avocado oil in a large skillet over medium-high. Fry chicken 3-4 minutes per side until deeply golden and cooked through.
