  • 2 (6 oz / 170g each) Chicken breasts, pounded to 1/2-inch
  • 2 Large eggs, beaten
  • 1 cup (56g) Pork rinds, finely crushed
  • 2 tbsp Avocado oil (for frying)
  • to taste Salt and black pepper
  • to serve Lemon wedges (optional)

Method

  1. Season chicken with salt and pepper.
  2. Dip each breast in beaten egg, then dredge thoroughly in crushed pork rinds.
  3. Heat avocado oil in a large skillet over medium-high. Fry chicken 3-4 minutes per side until deeply golden and cooked through.
  4. Drain on paper towels and serve with lemon wedges.
