  • 1 lb (450g) Ground beef
  • 1/2 cup Coconut cream
  • 2 tbsp Curry powder
  • 2 cups Spinach
  • 3 cloves Garlic, minced
  • 1 tsp Ginger, grated
  • 1 tbsp Coconut oil
  • for serving Lime wedges
  • to taste Salt

Method

  1. Heat coconut oil in a skillet. Brown ground beef 5 minutes, breaking it up.
  2. Add garlic, ginger, and curry powder. Cook 1 minute until fragrant.
  3. Pour in coconut cream, stir and simmer 5 minutes.
  4. Add spinach, stir until wilted.
  5. Serve in bowls with lime wedges.
