Ingredients
- 1 lb (450g) Ground beef
- 1/2 cup Coconut cream
- 2 tbsp Curry powder
- 2 cups Spinach
- 3 cloves Garlic, minced
- 1 tsp Ginger, grated
- 1 tbsp Coconut oil
- for serving Lime wedges
- to taste Salt
Method
- Heat coconut oil in a skillet. Brown ground beef 5 minutes, breaking it up.
- Add garlic, ginger, and curry powder. Cook 1 minute until fragrant.
- Pour in coconut cream, stir and simmer 5 minutes.
- Add spinach, stir until wilted.
- Serve in bowls with lime wedges.
