Ingredients

  • 1 cup (125g) Fresh raspberries
  • 8 oz (225g) Mascarpone cheese
  • 1/2 cup Heavy cream
  • 3 tbsp Powdered erythritol
  • 1/2 tsp Vanilla extract
  • 1/2 tsp Lemon zest

Method

  1. Reserve a few raspberries for garnish. Mash the rest with 1 tbsp sweetener.
  2. In a large bowl, beat mascarpone with remaining sweetener, vanilla, and lemon zest until smooth.
  3. In a separate bowl, whip heavy cream to stiff peaks.
  4. Fold whipped cream into mascarpone gently until combined.
  5. Swirl mashed raspberries through the mousse for a marbled effect.
  6. Spoon into glasses, top with reserved raspberries, and chill 15 minutes before serving.
