Ingredients
- 1 cup (125g) Fresh raspberries
- 8 oz (225g) Mascarpone cheese
- 1/2 cup Heavy cream
- 3 tbsp Powdered erythritol
- 1/2 tsp Vanilla extract
- 1/2 tsp Lemon zest
Method
- Reserve a few raspberries for garnish. Mash the rest with 1 tbsp sweetener.
- In a large bowl, beat mascarpone with remaining sweetener, vanilla, and lemon zest until smooth.
