  • 4 pieces Bone-in, skin-on chicken thighs
  • 1 tbsp Olive oil
  • 3 cups Mixed greens
  • 1 small Tomato, sliced
  • to taste Salt, pepper, paprika, garlic powder

Method

  1. Preheat oven to 425°F (220°C).
  2. Pat chicken thighs dry and rub with olive oil, salt, pepper, paprika, and garlic powder.
  3. Place skin-side up on a baking sheet.
  4. Roast 25-30 minutes until skin is crispy and internal temp reaches 165°F.
