Ingredients

  • 8 Eggs
  • 2 cups Fresh spinach
  • 1 cup Mushrooms, sliced
  • 2 oz (60g) Goat cheese
  • 2 tbsp Heavy cream
  • 1 tbsp Butter
  • to taste Salt, pepper, nutmeg

Method

  1. Preheat oven to 375°F. Sauté mushrooms in butter 4 minutes. Add spinach until wilted.
  2. Whisk eggs with cream, salt, pepper, and nutmeg.
  3. Pour eggs over veggies in the oven-safe skillet.
  4. Dot with goat cheese.
  5. Bake 18-20 minutes until set and lightly golden. Cool 5 minutes, slice into wedges.
