Ingredients
- 8 Eggs
- 2 cups Fresh spinach
- 1 cup Mushrooms, sliced
- 2 oz (60g) Goat cheese
- 2 tbsp Heavy cream
- 1 tbsp Butter
- to taste Salt, pepper, nutmeg
Method
- Preheat oven to 375°F. Sauté mushrooms in butter 4 minutes. Add spinach until wilted.
- Whisk eggs with cream, salt, pepper, and nutmeg.
- Pour eggs over veggies in the oven-safe skillet.
- Dot with goat cheese.
- Bake 18-20 minutes until set and lightly golden. Cool 5 minutes, slice into wedges.
