Ingredients

  • 2 cups (450g) Whole-milk cottage cheese (whey-strained, e.g., Good Culture)
  • 6 medium (60g) Strawberries, hulled and chopped
  • 2 tbsp Monk fruit sweetener
  • 1 tsp Vanilla extract

Method

  1. Blend cottage cheese in a food processor or high-speed blender until completely smooth, about 30 seconds.
  2. Stir in monk fruit and vanilla extract.
  3. Fold in chopped strawberries.
  4. Divide between two bowls and serve cold.
