Ingredients
- 2 cups (450g) Whole-milk cottage cheese (whey-strained, e.g., Good Culture)
- 6 medium (60g) Strawberries, hulled and chopped
- 2 tbsp Monk fruit sweetener
- 1 tsp Vanilla extract
Method
- Blend cottage cheese in a food processor or high-speed blender until completely smooth, about 30 seconds.
- Stir in monk fruit and vanilla extract.
- Fold in chopped strawberries.
