Ingredients

  • 2 Large low-carb tortillas (10-inch)
  • 8 oz (227g) Cooked shredded chicken or doner-spiced chicken
  • 2 oz (56g) Cheddar, shredded
  • 1/4 cup Romaine lettuce, shredded
  • 4 tbsp Tzatziki or garlic sauce
  • 1/4 cup Tomato, finely diced
  • to taste Salt and black pepper

Method

  1. Make a single cut from the center of each tortilla straight to the edge.
  2. Imagine four quadrants. Place chicken in one, cheese in the next, lettuce + tomato in the third, and the sauce in the fourth.
  3. Starting at the cut, fold the first quadrant over the next, then the next, then the next — you'll end up with a triangular folded sandwich.
  4. Press in a panini grill (or skillet, weighted with a pan) for 2-3 minutes per side until golden and the cheese has melted.
  5. Slice in half and serve.
