Ingredients

  • 16 Large cherry tomatoes
  • 1 can (5 oz) Canned tuna, drained
  • 2 tbsp Mayonnaise
  • 1 tsp Dijon mustard
  • 1/3 cup Cheddar, shredded
  • 1 tbsp Fresh chives, chopped
  • to taste Salt and pepper

Method

  1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment.
  2. Slice tops off cherry tomatoes and scoop out seeds with a small spoon.
  3. Mix tuna, mayo, mustard, half the chives, salt, and pepper.
  4. Spoon tuna salad into each tomato. Top with shredded cheddar.
  5. Bake 5 minutes until cheese is melted and tomatoes warmed.
  6. Garnish with remaining chives and serve.
