Ingredients

  • 4 Large eggs
  • 2 oz (60g) Sharp cheddar, sliced
  • 1 cup (30g) Baby spinach
  • 1 heaping tbsp (12g) Sesame seeds
  • 2 stalks (20g) Green onions, thinly sliced
  • 1 tbsp Olive oil
  • to taste Salt

Method

  1. Whisk eggs with a pinch of salt until uniform.
  2. Stir in the sliced green onions.
  3. Warm olive oil in a non-stick skillet over medium-low heat. Scatter the sesame seeds evenly across the bottom so they toast as the egg sets.
  4. Pour the egg mixture over the sesame layer. Place spinach and cheddar slices on one half.
  5. Cover the skillet and cook 5-6 minutes until the top is just set.
  6. Fold the bare half over the filling, slide onto a plate, and slice in two.
