- 4 Large eggs
- 2 oz (60g) Sharp cheddar, sliced
- 1 cup (30g) Baby spinach
- 1 heaping tbsp (12g) Sesame seeds
- 2 stalks (20g) Green onions, thinly sliced
- 1 tbsp Olive oil
- to taste Salt
Method
- Whisk eggs with a pinch of salt until uniform.
- Stir in the sliced green onions.
- Warm olive oil in a non-stick skillet over medium-low heat. Scatter the sesame seeds evenly across the bottom so they toast as the egg sets.
- Pour the egg mixture over the sesame layer. Place spinach and cheddar slices on one half.
- Cover the skillet and cook 5-6 minutes until the top is just set.
- Fold the bare half over the filling, slide onto a plate, and slice in two.
