Ingredients
- 200 g brussels sprouts
- 100 ml heavy cream
- 50 g gruyère
- 100 g bacon
- 2 tbsp mustard
Method
- Preheat the oven to 200°C (390°F) and trim the brussels sprouts, halving any larger ones to ensure even cooking.
- Cook the bacon in an oven-safe skillet over medium heat for about 5 minutes until crispy, then remove and set aside, leaving the rendered fat in the pan.
- Add the brussels sprouts to the skillet and sauté in the bacon fat for 4 minutes until lightly golden on the cut sides.
- Whisk together the heavy cream and mustard in a small bowl, then pour the mixture over the brussels sprouts in the skillet.
- Crumble the reserved bacon over the top and sprinkle the grated gruyère evenly across the surface.
- Transfer the skillet to the preheated oven and bake for 20 minutes until the cream is bubbling, the brussels sprouts are tender, and the gruyère has formed a deep golden gratin crust.
