Ingredients

  • 200 g brussels sprouts
  • 100 ml heavy cream
  • 50 g gruyère
  • 100 g bacon
  • 2 tbsp mustard

Method

  1. Preheat the oven to 200°C (390°F) and trim the brussels sprouts, halving any larger ones to ensure even cooking.
  2. Cook the bacon in an oven-safe skillet over medium heat for about 5 minutes until crispy, then remove and set aside, leaving the rendered fat in the pan.
  3. Add the brussels sprouts to the skillet and sauté in the bacon fat for 4 minutes until lightly golden on the cut sides.
  4. Whisk together the heavy cream and mustard in a small bowl, then pour the mixture over the brussels sprouts in the skillet.
  5. Crumble the reserved bacon over the top and sprinkle the grated gruyère evenly across the surface.
  6. Transfer the skillet to the preheated oven and bake for 20 minutes until the cream is bubbling, the brussels sprouts are tender, and the gruyère has formed a deep golden gratin crust.
